Description

Are you looking for a delicious breakfast or brunch recipe? Well, I've got just the thing for you - a Baked Sweet Potato Frittata! Whether you prefer it hot or cold, this dish is sure to impress your taste buds.

Now, let me tell you a little bit about frittatas. They're similar to omelets, but the filling is mixed in with the eggs in the pan rather than being folded in the center. And this recipe is super easy to make!

If you want to impress your guests with a fancy presentation, you can use a well-seasoned cast iron skillet. But, a Le Creuset® baking dish will also do the trick for a traditional Sunday brunch.

Ingredients
  • 6 large eggs
  • 1 large sweet potato (peeled and diced)
  • 1 medium red bell pepper (diced)
  • 1 cup gouda cheese (shredded)
  • 2 cups fresh arugula or spinach
  • 3 tablespoons Half and Half
  • .5 medium red onion (diced)
  • .5 teaspoons garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Non-stick cooking spray
  • sea salt and black pepper (to taste)
  • Optional
  • fresh parsley and basil (to serve)
Instructions
  1. To make the frittata, start by preheating your oven to 350°F and spraying a medium-sized baking dish with non-stick cooking spray. Heat up one tablespoon of olive oil in a large skillet over medium heat, and then add in the sweet potato, red pepper, onion, garlic powder, basil, and parsley. Cook and stir occasionally until the vegetables start to soften and the sweet potato has some color. This should take about 5-6 minutes. Once done, transfer the vegetables to the baking dish and spread them out in a uniform layer.

  2. In the same skillet used for the vegetables, add in the remaining olive oil and toss in the arugula or spinach. Cook and stir occasionally until the greens wilt. Then, spread them evenly on top of the vegetables in the baking dish.

  3. Pour the egg mixture on top and spread it out with a rubber spatula, if necessary, to cover the entire surface. Sprinkle the remaining cheese on top and season with additional salt and black pepper, if desired.

  4. Place the baking dish in the preheated oven and bake until the egg is set and the top starts to turn golden brown. This should take about 25-30 minutes. Once it's done, remove it from the oven and let it cool slightly before slicing. If you'd like, garnish with some fresh herbs like parsley and basil, and serve immediately.

  5. There you have it! A delicious Baked Sweet Potato Frittata that's perfect for breakfast or brunch. Enjoy!
